Unified Ferments

Wen Shan Bao Zhong NA

$27.99

Wen Shan Bao Zhong is a lightly oxidized, bright oolong tea hailing from northern Taiwan. This particular batch comes from a fourth-generation tea-producing family in the Nantou region, whose expertise draws out the tea’s signature powdery floral notes, deep oat sweetness, and subtle salinity.

Unified Ferments’ unique fermentation process concentrates this medley into a vivid expression with notes of orchid, honeysuckle, and fresh marzipan—yielding an approachable, if delightfully unclassifiable, beverage.

This ferment pairs beautifully with fresh oysters, sheep’s milk cheese, watercress sandwiches, or anything celebrated for its freshness and brightness.

Best served at a chilled white wine temperature—and known to disappear quickly once opened.

Unified Ferments lives at the intersection of two ancient culinary traditions: tea production and fermentation.

With roots stretching deep into prehistory, both practices reflect a symbiotic relationship between humans and their environment. Unified Ferments brings these two worlds together to create a category-defying, non-alcoholic fermented beverage—something far more refined than what most consider “kombucha.”

Unlike many fermenters of tea, Unified Ferments puts tea first. Their approach uses the chemistry of kombucha fermentation as a tool to unlock the complexity of tea, offering a beverage that deserves a place in stemware.

As more people explore life with less alcohol, or simply seek a gentler way to unwind, Unified Ferments stands at the forefront of a movement to drink better—with pleasure, purpose, and a little bit of fizz.
