Pen Druid's traditional spontaneous aged for a year & blended with Italian sour plums. Each year the skins of the plums change in their pigment & this vintage they got a hell of a color! The plum is used in traditional Lambics but not widely, however their spontaneous responds extremely well with this fruit & it’s one of their favorite beers. White flower, white pepper, nutmeg, & floral notes on the nose. Tart & slightly stringent on the pallet. It is a beer that can be aged for sure & will only get better in the next 2-4 years.
*As with the nature of the spontaneity of the beer, carbonation levels will vary due to microbial & yeast conditions! Enjoy the adventure! Always delicious!!!
