Down The Shore Cashew Cheese

This summer flavor gets its smokey flavor from the addition of toasted Chipotle Meco & Morita chili paste, as well as a hint of heat. The dried Lions Manes from Phillips Mushroom Farms in Kennett Square are now smoked and their soaking liquid is reduced to a rich demi-glace, resulting in an earthy nuanced smokey flavor.
