In this hands-on workshop, Olive Todd, head of Clavel's Bar Lab, will guide participants through creating three unique ferments with versatile applications. Together, the group will make golden beet kvass, ginger bug, and cheongs, exploring how seasonal produce can be transformed through fermentation into ingredients that go far beyond their initial purpose.
Attendees will learn how each ferment can be adapted for a wide range of uses—whether in spirited or spirit-free drinks, baked goods, or culinary creations—giving them practical skills to experiment with at home. Everyone will leave with their own ferments, along with Olive’s insights on how to enjoy them in a variety of flavorful applications.
This workshop is open to all levels, perfect for anyone curious about fermentation, or looking for new ways to highlight seasonal produce in both food and beverage.
