
Clavel at HEX Superette | Plants, Fermentation and Fire Worshop: October 18th
Join Olive Todd, co-director of the bar program at Clavel Mezcaleria, for an in-depth fermentation workshop inspired by the traditions of mezcal production. Olive will share the process of sunchoke fermentation; transforming sunchokes through roasting in a hand-dug underground pit and fermenting them in a style similar to mezcal and pineapple tepache—a technique Olive has developed through visits to Oaxaca and close study of mezcal.
While the pit-roasting itself will be done prior to the workshop, Olive will bring samples (at various stages of fermentation) for participants to taste and examine. The session will be taught through both a storytelling lens and hands-on instruction, giving attendees a rich understanding of the history, cultural roots, and practical steps to recreate this project at home.
This workshop is designed for all levels and will especially resonate with those who love mezcal and fermentation processes, are curious about new ways to utilize local and climate-hardy produce, or simply want to dig into a unique fermentation project with guidance from a passionate fermentation educator.
