Grapes are harvested late in season and kept in tank for 2 months skin contact. trousseau Gris, native to the Jura region in France, is an incredibly rare grey skin variety with only one vineyard in production in CA. Five days on the skins imparts a vibrant copper hue, soft tannis, and layered flavor.
