Petit Verdot

Grown at Cool Ridge Vineyard, harvested on October 11, 2019. Fermented in stainless steel on the skins for 3 weeks, drained to a mix of new and once used barrels and aged for 18 months.  

aroma: decadent chocolate cake with raspberry glaze, plum jam, cloves, cumin seeds ⠀

palate: cranberry jam, plum chutney, fudgey fullness

pairing: braised short rib with mashed potato and crispy onions⠀
