Make it a Meal: Green Tomato Chicken Yummy Soup

This tasty creation made with HEX Superette ingredients is sure to be a hit in those cold wintery months. With a bright brine and warm ginger and spices, this hearty soup is great for keeping the winter cold at bay!

 

Ingredients:

  • 4 Quarts water
  • ⅔ Bottle of HEX Green Tomato Kimchi Brine
  • 1 onion, diced
  • 5 carrots, diced (optional - peeled)
  • 2 cups of chopped kale
  • 1 lb boneless skinless chicken thighs, diced
  • 4 cloves garlic, minced
  • 3 bay leaves
  • 1 cup wild rice
  • 1 can hominy corn
  • 3 tbps Extra Virgin Olive Oil
  • Grated ginger, to taste
  • Dried mushrooms or umami powder, to taste
  • Salt, to taste
  • Spices (suggestions, feel free to have fun!) - Black pepper, HEX Umami Powder, poultry seasoning, All Purpose or Italian Seasoning Blend

 

Instructions:

  1. Add olive oil, chicken thighs, and onion to large stock pot on medium heat. Salt chicken to taste and cook through. Remove chicken to cool.
  2. Add water, HEX Brine, carrots, garlic, bay leaves, ginger, dried mushrooms, and spices. Bring to a boil.
  3. Chop or pull chicken and add back to soup base.
  4. After about 30 minutes, add hominy corn and kale.
  5. Bring pot to a simmer for about an hour THEN taste to add any additional seasonings.
  6. 30 minutes before serving, add wild rice (optional - cook wild rice separately and add to individual servings)
  7. Enjoy!
