This tasty creation made with HEX Superette ingredients is sure to be a hit in those cold wintery months. With a bright brine and warm ginger and spices, this hearty soup is great for keeping the winter cold at bay!
Ingredients:
- 4 Quarts water
- ⅔ Bottle of HEX Green Tomato Kimchi Brine
- 1 onion, diced
- 5 carrots, diced (optional - peeled)
- 2 cups of chopped kale
- 1 lb boneless skinless chicken thighs, diced
- 4 cloves garlic, minced
- 3 bay leaves
- 1 cup wild rice
- 1 can hominy corn
- 3 tbps Extra Virgin Olive Oil
- Grated ginger, to taste
- Dried mushrooms or umami powder, to taste
- Salt, to taste
- Spices (suggestions, feel free to have fun!) - Black pepper, HEX Umami Powder, poultry seasoning, All Purpose or Italian Seasoning Blend
Instructions:
- Add olive oil, chicken thighs, and onion to large stock pot on medium heat. Salt chicken to taste and cook through. Remove chicken to cool.
- Add water, HEX Brine, carrots, garlic, bay leaves, ginger, dried mushrooms, and spices. Bring to a boil.
- Chop or pull chicken and add back to soup base.
- After about 30 minutes, add hominy corn and kale.
- Bring pot to a simmer for about an hour THEN taste to add any additional seasonings.
- 30 minutes before serving, add wild rice (optional - cook wild rice separately and add to individual servings)
