HEX Brine Wings

"I do love having an excuse to make wings!"


  • 2-3 pounds of Springfield Farm Chicken Wings
  • 24 oz HEX Ferments Harmonie Brine
  • 2 tablespoons Dimitri's Garlic-infused oil
  • Chauncey's Smoked Paprika Garlic


  1. Brine the Chicken Wings: In a large bowl (or bag), combine the chicken wings and the Harmonie pickle brine.  Allow the wings to marinate in the brine for 30 minutes to an hour in the refrigerator. Using pickle brine serves a dual purpose in this recipe. Firstly, it imparts a delightful tangy flavor to the chicken wings, enhancing their taste without the need for a plethora of extra seasonings. Secondly, the brine plays a crucial role in maintaining the chicken's moisture during the entire cooking process, ensuring that the wings remain juicy and flavorful.
  2. Dry the Wings: After brining, remove the chicken wings from the brine. Do not rinse them; instead, pat the wings completely dry with paper towels. This ensures the skin will become crispy during baking.
  3. Preheat the Oven: Preheat your oven to 375°F (190°C) and place a wire drying rack inside a baking sheet to elevate the wings, this will promote even cooking and optimal crispiness.
  4. Coat with Garlic Oil and Spice Rub: a. In a large bowl, toss the dried chicken wings with 2 tablespoons of garlic-infused oil until they are lightly and evenly coated.  Add your preferred spice rub to the wings( I chose Eat more Chuancey’s Smoky Paprika Garlic), adjusting the amount to your taste. Toss the wings again to ensure the spice blend is distributed evenly throughout.
  5. Bake the Wings: Place the seasoned wings on the wire rack inside the prepared baking sheet. This elevates the wings and allows excess fat to drip away during cooking.  Bake the wings for 1 hour at 375°F (190°C), flipping them every 20 minutes. This flipping helps ensure that the wings cook evenly and become crispy on all sides.
  6. Serve and Enjoy: Once the wings are golden brown and crispy, remove them from the oven.  Serve your HEX y Brine Wings hot and enjoy them as a flavorful and crispy snack or meal.
