Green Tomato Kimchi
Green Tomatoes*, Napa Cabbage*, Red Pepper*, Onion*, Garlic*, Coriander Seeds*, Mustard Seeds*, Korean Red Pepper, Sea Salt.
Flavor Profile: Bright, earthy with lots of funk. This kimchi is not super spicy, but it's also not mild; bright green tomatoes, pops of coriander, mustard and Korean red pepper make this fall seasonal a stand out for all dishes. Try it on the MLT at HEX Superette! This years Green Tomato Kimchi veggies are from our farm partners at Franklin Sustainable Farms & Moon Valley Farm.
Goth Kimchi
Bok Choy*, Radishes*, Hot Peppers*, Scallions*, Ginger*, Onions*, Black Garlic, Garlic*, Korean Red Pepper, Unrefined Sea Salt.
A cauldron of deep, haunting heat. Fermented in the shadows with enough garlic to banish whatever lurks. Conjured in collaboration with Mad Radish Farm.
Daikon Dills
Daikon*, Dill*, Garlic*, Pickling Spice, Unrefined Sea Salt
Flavor Profile: Our late winter early spring version of a cucumber pickle but with daikon! Fully sour with fresh dill and garlic, these savory ripple cut pickles are perfect for those late night pickle cravings or on a sandwich (but don't stop there!). The brine! Excellent in salad dressings, savory seltzer or a martini.
